АННОТАЦИЯ / ABSTRACT
Цель.
Разработать прототип цифровой реализации «Базы ПБМ» и показать возможные применения пищевых биоинформационных матриц в молочной промышленности на сценариях верификации пищевого объекта, рециклинга вторичных пищевых потоков и аддитивного производства.
Материалы и методы.
Прототип цифровой среды «База ПБМ» разработан на основе мультионтологической архитектуры представления пищевого объекта, которая включает контуры идентификации, описания, измерения и верификации, а также производственный слой. Апробация выполнена на модельном наборе молочных объектов с различной матричной организацией. Сигнатуры формировали с учетом принципов системной инженерии, архитектурного описания и метрологического обеспечения данных (ISO/IEC/IEEE 42010, ISO/IEC/IEEE 15288, ISO/IEC 17025, ISO 5725). Производственные связи представлены в графовой СУБД Neo4j с использованием языка Cypher.
Результаты.
Разработан прототип интерфейса «База ПБМ», в который внесены сигнатуры молочных пищевых объектов и графы производственных связей. В прототипе реализованы каталог пищевых объектов, карточка сигнатуры, экран сравнения и графовый экран производственного слоя. Показано, что сопоставление ожидаемой и фактической сигнатуры позволяет определять несоответствия по уровню представления: идентификация, описание матричной структуры, измерительный контур, критерии соответствия или производственный слой. Для рециклинга цифровая сигнатура позволяет учитывать матричную организацию пищевого объекта, фактические показатели и возможный маршрут переработки. Для аддитивного производства апробировано формирование сигнатуры ПБМ продукта до получения пищевого объекта аддитивным способом, включая атрибут fabrication_instruction, связывающий геометрию, траекторию печати, порядок нанесения слоев и проверку неизменности файла.
Заключение.
ПБМ переведены в формат цифровой среды, где сигнатура пищевого объекта становится рабочим элементом интерфейса, сравнения, атрибутного поиска и производственного графа. Продемонстрированы три сценария применения цифровой сигнатуры в «Базе ПБМ»: верификация, рециклинг и аддитивное производство. Дальнейшее развитие связано с версионированием сигнатур, учетом неопределенности измерений и интеграцией с лабораторными и производственными контурами данных.
Abstract
Purpose.
To develop a prototype digital implementation of the FBM Database and demonstrate possible applications of Food Bioinformation Matrices in the dairy industry in three scenarios: food object verification, recycling of secondary food streams, and additive manufacturing.
Materials and Methods.
The prototype digital environment "FBM Database" was developed on the basis of a multi-ontological architecture for representing a food object. The architecture includes identification, description, measurement, and verification loops, as well as a production layer. The prototype was tested on a model set of dairy food objects with different matrix organizations: emulsion, fermented, fat-based, powder, protein-gel, and composite additive matrices. Signature formation was carried out in accordance with the principles of systems engineering, architecture description, and metrological data assurance (ISO/IEC/IEEE 42010, ISO/IEC/IEEE 15288, ISO/IEC 17025, ISO 5725). Production relationships were represented in the Neo4j graph database using the Cypher query language.
Results.
A prototype interface of the "FBM Database" was developed, containing signatures of dairy food objects and production relationship graphs. The prototype includes a food object catalog, a signature card, a comparison screen, and a graph screen for the production layer. It was shown that comparison of the expected and actual signatures makes it possible to identify discrepancies at the level of representation: identification, matrix structure description, measurement loop, conformity criteria, or production layer. For recycling, the digital signature makes it possible to consider the matrix organization of the food object, actual indicators, and possible processing route. For additive manufacturing, the formation of an FBM product signature before obtaining the food object by additive means was tested, including the fabrication_instruction attribute that links geometry, printing path, layer deposition order, and file integrity verification.
Conclusion.
FBM were translated into the format of a digital environment in which the food object signature becomes a working element of the interface, comparison, attribute-based search, and production graph. Three scenarios for applying the digital signature in the "FBM Database" were demonstrated: verification, recycling, and additive manufacturing. Further development is associated with signature versioning, accounting for measurement uncertainty, and integration with laboratory and production data loops.
