Цель.
Разработка измерительной электрохимической системы, обеспечивающей одновременную регистрацию откликов массива сенсоров, и создание на ее основе метода оценки качества мясного сырья с формированием цифрового образа исследуемой среды на основе многомерного статистического анализа данных.
Материалы и методы.
Исследование выполнено с использованием разработанной измерительной системы, представляющей собой многоканальный потенциометр, объединяющий массив ионоселективных электродов (Ca2+, K+, Na+, Mg2+, Cl-, F-), pH-электрод и электрод сравнения. Образцы мясного сырья подготавливались в виде водных суспензий, после чего регистрировались отклики сенсорного массива, формирующие многомерные векторы данных, рассматриваемые как цифровые образы образцов. Полученные данные визуализировались с использованием радиальных диаграмм и подвергались математической обработке. Для выявления закономерностей и снижения размерности применялся метод главных компонент, а для разделения и классификации образцов использовался метод опорных векторов.
Результаты.
Разработанная измерительная система обеспечила одновременную регистрацию потенциометрических сигналов всех сенсоров массива. Использование независимых измерительных каналов позволило каждому электроду регистрировать собственный потенциал без взаимного влияния, а реализованные усиление, фильтрация и аналого-цифровое преобразование обеспечили формирование цифровых данных для последующей компьютерной обработки. Формируемые многомерные отклики позволяют получать цифровые образы образцов, чувствительные к изменениям их химического состава. На основе зарегистрированных потенциометрических сигналов формировались численные массивы данных и их визуальные профили, отражающие совокупный отклик сенсорного массива. Показана возможность различения мясного сырья по степени свежести и рецептурным характеристикам. Анализ в пространстве главных компонент выявил различия между исследуемыми группами образцов, а классификация методом опорных векторов обеспечила их разделение и распознавание новых образцов.
Заключение.
Разработанная измерительная система и реализованный на ее основе подход показали потенциал для экспресс-оценки качества мясного сырья. Обеспечивается получение повторяемого многомерного отклика, отражающего совокупность физико-химических характеристик продукта, и выявление отклонений от эталонного состояния. Предложенное решение является перспективным для практического применения в системах оперативного контроля качества в пищевой промышленности.
Abstract
Purpose.
This study presents the development of a compact electrochemical system enabling the simultaneous acquisition of responses from a sensor array, as well as a method for assessing the quality of meat raw materials based on the formation of a digital profile of the analyzed medium using multivariate statistical analysis.
Materials and Methods.
The study was carried out using a developed measurement system, which is a multichannel potentiometer integrating an array of ion-selective electrodes (Ca2+, K+, Na+, Mg2+, Cl-, F-), a pH electrode, and a reference electrode. Meat samples were prepared as aqueous suspensions, after which responses of the sensor array were recorded, forming multidimensional data vectors interpreted as digital representations of the samples. The obtained data were visualized using radar plots and processed using statistical methods. Principal component analysis was applied for pattern recognition and dimensionality reduction, while support vector machines were used for classification and separation of samples.
Results.
The developed measurement system enabled the simultaneous acquisition of potentiometric signals from all sensors in the array. The use of independent measurement channels allowed each electrode to record its own potential without mutual interference, while the implemented signal amplification, filtering, and analog-to-digital conversion ensured the generation of digital data for subsequent computer processing. The obtained multidimensional responses enable the formation of digital representations of samples that are sensitive to changes in their chemical composition. Based on the recorded potentiometric signals, numerical datasets and corresponding visual profiles reflecting the overall response of the sensor array were constructed. The results demonstrate the ability to distinguish meat raw materials according to freshness level and formulation characteristics. Analysis in the principal component space revealed differences between the studied groups of samples, while classification using the support vector machine method ensured their separation and identification of new samples.
Conclusion.
The developed measurement system and the proposed approach demonstrated strong potential for rapid assessment of meat raw material quality. The system ensures the acquisition of reproducible multivariate responses reflecting the overall set of physicochemical characteristics of the product, as well as reliable detection of deviations from the reference state. The proposed solution is promising for practical application in real-time quality control systems in the food industry.
